MERY MIX – Mix for meringue and pavlova 1 Kg – LAPED
It is an easy-to-make powder base that allows you to create meringues and pavlovas in a short time, thus making the chef's work easier and guaranteeing a perfect and constant result. Mery Mix does not contain egg white, thus giving the finished product a longer shelf life.
Dosage
- 300 g Mery Mix
- 90 g Water
Preparation
Whip the Mery Mix preparation with water for approximately 3-5 minutes until a consistent mixture is obtained.
Cook for approximately 2/3 hours in a preheated oven at 60-80°C or until completely dry.
With the above dosage you will obtain approximately 80 meringues with a diameter of 2.5 cm.
MERINGUE
Ingredients
- 300 g Mery Mix
- 90 g Water
PREPARATION
Whip the Mery Mix preparation with water for about 3-5 minutes until a
consistent mixture is obtained. Cook for approximately 2/3 hours in a preheated oven at 60-80°C
or until completely dry.
With the above dosage you will obtain approximately 80 meringues with a diameter of 2.5 cm.
BUTTER CREAM WITH MERINGUE
Ingredients
- 300 g Mery Mix
- 400 g Butter
- 90 g Water
PREPARATION
Whip the Mery Mix preparation with water for approximately 3-5 minutes until a
consistent mixture is obtained. Then add the butter at room temperature or
softened in the microwave in several batches.
Color or flavor as desired.
Butter cream can be used for classic decorations or with piping bags, for
smoothing and filling desserts, or as a filling.
